Betty's Breakfast Energy Bars

Ingredients
100g butter
200g clear honey
200g rolled oats
150g mixed seeds
100g toasted flaked almonds
100g sultanas
50g ground almonds
2 tsp sesame seeds

Method
Pre-heat the oven to 180 C , gas mark 4

Heat the butter and honey in a saucepan until the butter has melted. Stir in all of the other ingredients except the sesame seeds and press the mixture into a 20cm square baking tin. Sprinkle with the sesame seeds and bake for 15 minutes until golden brown. Allow to cool a little before cutting into about 12 bars.
Leave in the tin until completely cold and serve as a snack or high energy breakfast bar.

BETTY'S DARK RUM RICH CHOCOLATE TRUFFLES

This will make a splendid centre decoration for your Christmas Table:- You will need
225g Plain Chocolate
100ml Double Cream, 1 tablespoon Dark Rum and a selection of coatings to include - Cocoa, Chopped Mixed Nuts, Chocolate Vermicelli, Honeycomb pieces.

Bring the cream to the boil on the boiling plate, then add the plain chocolate and stir until melted. Add the rum and stir, leave to cool. Refrigerate for an hour to firm up.

Once the truffle mixture is firm, take bite sized handfuls and roll into balls in your hands. Toss in one of the coatings till covered all over and place on a tray with a sheet of bak'o'glide. For the Truffle Topiary Tree

Materials
1 clean flower pot, stick or old wooden spoon, Petite Four Cases, 1 Quantity of Betty's Rich Rum Truffles with a mixture of coating, Decorative ribbon, silk flowers or plastic berries. Block of self setting Clay, Dried Flower Oasis Ball, cocktail sticks.

Set the stick or old wooden spoon in the Flower Pot using the self setting clay and fill the oasis ball with the truffles set into petite four cases. Construct as shown in the picture. Tie with decorative ribbon and hide the tree until Christmas day or the truffles will disappear!

CHRISTMAS PUDDING

Do you really want to make 3 Christmas puddings? If you are the paragon of virtue that your mother in law always wanted, here are the quantities for 3. Of course, if mother in law is the enemy, just do 1/3 of the quantities and eat it yourself!

225g Plain flour, 225g fresh white breadcrumbs, 100g ground almonds, 1 tsp ground mixed spice, 1/2 tsp cinnamon, 175g grated carrots, 250g sultanas, 50g chopped peel, juice and zest from 1 lemon and 1 orange, 150ml dark rum, 4 tablespoons black treacle, 1tsp baking powder, 225g shredded suet, 500 g dark brown Muscavado sugar, 1/2 tsp grated nutmeg, 175g stoned prunes, chopped, 250g currants, 250g raisins, 2 apples peeled and chopped, 5 eggs beaten, 300ml stout, 4 tablespoons golden syrup. Yes, this really is Grandmother Twyford's recipe!!

Sift the flour with the baking powder, add the rest of the ingredients and combine and ask every member of the family to have a stir and a wish (a Twyford's tradition). If the mixture looks a little dry, just add some more booz!

Divide between 3 x 900g greased pudding basins. Cover with a circle of greaseproof and then cover with muslin like granny used to.

Steam on a trivet in a large saucepan with boiling water to come 1/2 way up. Bring to the boil and transfer to the simmering oven for 2-3 hours. The pudding will be delicious!!

STUFFING WREATH!!

You might like to ring the changes with this eye catching stuffing wreath (I'm sure you'll have plenty of time...)

For the Wreath
1lb Sausagemeat, Zest of one lemon, 1 Beaten Egg, 1 Onion finely chopped, 454 g Freeze dried Chestnuts roughly copped, Handful each of Sage, Parsley & Thyme finely chopped.

GARNISH
24 Cocktail sausages, 12 slices of streaky bacon stretched with the back of a knife and cut in half, cocktail sticks and Bay leaves plus Betty Twyford stuffing balls - 24 of them!

For the wreath, place all the ingredients in a mixing bowl and combine and season with salt and pepper. Place on a baking tray lined with a sheet of Bake'O'Glide. Shape into a circle with a whole in the middle. O.
Wrap some of the sausages in bacon and roll the remaining bacon into mini rolls. You will have a selection of sausages, bacon roll and stuffing balls in which to decorate your wreath, attaching them with cocktail sticks. Bake in the roasting oven on a grid shelf on the base of the roasting oven for approx 45 mins (check it at times ). If it starts to brown or dry out , cover loosely with baking or greaseproof paper.

Once cooked, let it rest, then transfer to a plate and garnish with bay leaves. IT WILL BE WORTH IT!!

A little more than 12 days to Christmas...but

This might help... we can start with the slow roasted turkey!
Remove the wishbone for ease of carving. Loosen the skin over the breast and stuff with your choice of stuffing, fill the cavity with onions, lemons cut in half, and a good handful of herbs. Cover breast with a lattice of streaky bacon. Rub butter over the skin. Place in a roasting tin on a rack or a me poi (roughly chopped onion, celery, leek and carrot). Cover loosely with foil and place in the simmering oven over night.
Note: If your simmering oven is slow, you could start it off in the Roasting Oven for about 15mins to give a head start!

8-10lb - 8-10 hours
11-16lb - 9-12 hours
17 - 22ob 10-14 hours but it all depends on your simmering oven.

Here is a good stuffing recipe
125g Breadcrumbs
1 Onion chopped
2 Handful's Herbs (sage, parsley, thyme) chopped finely100g Tub of Cream Cheese
Chopped smoky bacon
1 beaten egg, seasoning. Place all of the ingredients in a bowl and combine thoroughly then STUFF!

Roasted Pumpkin Seeds

1. Wash the pumpkin seeds and discard any membrane and dry them in a clean tea towel.

Glitter, ghouls and gorgeous cupcakes were the focus during a special Halloween workshop in Leominster on Wednesday (October 26).

The event, which took place at AGA Twyford’s new showroom at Marches Trade Park included demonstrations on decorating a Devil’s Food Cake and lots of scary cupcake designs from expert chef, Jacqui Barker.

Visitors also enjoyed a light lunch and refreshments along with a 15 per cent discount on selected AGA bakeware products.

Mrs Barker said: “It was brilliant to see everyone having so much fun decorating their cupcakes. Many of the techniques are quick and easy and visitors can still buy a Halloween cupcake decorating kit so they can have a go at home.”

Devil’s Food Cake

50g/2oz Cocoa 225ml/7floz Water

100g/4oz Soft Margarine 275g/10oz Caster Sugar

2 Eggs 175g/7oz Plain Flour

1/4tsp Baking Powder 1tsp Bicarbonate of Soda

American Frosting

450g/1lb2oz Caster Sugar 135ml/4floz Water

2 Egg Whites

1. Pre-heat the oven 180c/Gas Mark 4. Grease and base line 2 x 8”/20cm sandwich tins.

2. Whisk the cocoa into the water until smooth. Set aside. Place the margarine in a bowl and gradually whisk in the sugar until the mixture is pale and fluffy. Lightly whisk the eggs, then gradually whisk into the creamed mixture until evenly blended.

3. Sift the flour with the baking powder and bicarbonate of soda and fold into the creamed mixture alternatively with the cocoa and water.

4. Divide the mixture between the tins and level the surface. Bake in pre-heated oven for 30-35 minutes. Allow to cool in the tins for a few minutes. Then turn out onto cooling rack.

5. For the frosting. Place the sugar and water in a pan of water and heat gently until the sugar has dissolved. Bring to the boil and boil to 115c/ 240f (soft ball)

6. Meanwhile whisk the egg whites until stiff. Allow the bubbles to settle in the hot syrup and slowly four onto the egg whites, whisking all the time.

7. Use some of the frosting to sandwich the cakes together and cover the cakes with the remainder. Work quickly before the frosting sets.

Nasturtium pesto

Nasturtiums certainly brighten up any British garden. Not only are they pretty and easy to grow, they taste really nice too! People have been eating nasturtiums for hundreds of years but it is only in more recent years that the humble nasturtium appears to have fallen from grace!

Most people are aware that you can eat the pretty flowers, but did you know that you can also use the leaves to add a zing to your savoury recipes?

For pesto with an interesting twist take:

4 tightly-packed cups of nasturtium leaves

Up to 5 cloves of garlic depending on your taste

1 cup of good quality olive oil

2 drops of Tabasco sauce

1 cup of walnuts or pine nuts

1tsp of sugar

Juice of half a lemon

Method

Put all the ingredients in a food mixer and blend until smooth. You can freeze this pesto in ice cube trays to add a gourmet twist to pasta steak and chicken.

Autumn Mists and Mellow Fruitfulness

With the fabulous foraging season almost upon us, I have decided to team up with the wonderful Ludlow Jam Pan and stock up with preserves such as Raspberry Jam, Marrow and Ginger, a Worcestershire recipe, High Dumpsie Dearie Jam, Greengage Jam and Rose Petal Jelly.

Sara-Jane Brough started the Ludlow Jam Pan in October 2008 and it really evolved from a hobby of serious foraging and using up all the vegetable and fruit gluts from the garden.
Sara-Jane said: "I really loved the idea of home grown traditional uses for all these fruit and veg and decided to start the business from there."

Since then it has grown from doing the farmers market in Ludlow and various food festivals and an appearance on the Hairy Bikers food tour of Britain increased interest.
Sara-Jane is particularly well-known for her Hedgerow and the Crab Apple and Rose Petal Jelly. She said: "My main focus is using traditional recipes and techniques to make the preserves, so it is all done by hand in my own kitchen in open pans. I often get comments like, 'that is just how my mother's jam used to taste,' and 'it is like a taste of childhood'."
All products are free from artificial flavours, colourings gelling agents and thickeners which you often find in commercial preserves.
She continued: "I firmly believe that we are loosing some of the old skills, such as preserving food for the winter months. It is important for me as part of the business ethos to use heritage orchard fruits and the hedgerows bounty, and share these skills of preserving by doing talks and demonstrations."

SPINACH AND MUSHROOM NOODLES

Ingredients

Buy a packet of ready to use noodles (or dried noodles if you have them)

Big bagful of spinach from the garden - washed (it will steam down to nothing)

1 onion, chopped

1 clove garlic, finely chopped

1 leek, finely chopped

115g (4oz) mushrooms, finely chopped

75g (2oz) butter

140ml (¼pt) single cream

Method

Sauté the onions and mushrooms in the butter, add the leek and garlic and cook until tender, then add the steamed spinach.

Add some seasoning to taste and then the noodles.

Tip about ¼ pint single cream into the mix (use more if necessary).

Add chopped parsley and chives and serve immediately. Scrumptious!

Betty’s Luscious Lemon Curd

Ingredients

100g (4oz) butter

225g (8oz) castor sugar

3 lemons

3 eggs

Method

Place a jam jar in the simmering oven of the AGA. Once it is hot remove from the oven and melt the butter in the jar and return to the simmering oven.

Break the eggs into a bowl and beat the eggs.

In another bowl weigh out the sugar, add the finely grated lemon rind and juice from the lemons.

Once the butter has melted in the jar, add the lemon and sugar then sieve the beaten egg into the jar.

Shake well.

Place in the simmering oven. Check after an hour.

To test, coat a wooden spoon in the mixture. Run another implement through it and if the mixture stays parted, it is ready.

Cool and spread over hot buttered toast.

Herefordshire firm contributes to top TV show

A Herefordshire firm have restored the heart of a traditional country home as part of a top TV renovation show which was screened last Thursday.

Leominster-based Aga Twyford stepped in to re-enamel the AGA cooker for the Green family as part of the successful Channel Four TV series, ‘Help, My House is Falling Down’.

The show, which is hosted by the TV Queen of property development, Sarah Beeny, featured the family who needed a make-over for their kitchen, by transforming their ‘mustard’ yellow AGA cooker into something a little more subtle.

Sarah Beeny returns for a second series of the show that aims to help people rescue their homes from the brink of disaster and the Green family are in need of help to renovate their farmhouse in Writtle, near Chelmsford.

“When I first moved to the farm I could not get on with it but now, when we go on holiday I find it difficult to use a normal cooker. It takes a while to get the hand of using an Aga but once you are used to it is like it is one of the family.”

Andy and Andrea, who have five children between them, have been living in a caravan for the six weeks while the makeover was underway.

“If the weather is nice we barbecue, and if not, I do the best with what Ihave got in the caravan. I can’t wait to get back to my Aga.”

Andrea also runs a small business making jams and chutneys which are all made on the Aga which makes it even more important that the renovation is completed quickly.

“I am always making the family things like gingerbread and shortbread. It is so easy with an Aga to pop it in the oven and if you are going to have a busy day you can just place a casserole in the simmering oven to cook all day.”

Retro domestic goddesses limber up for Cancer Research UK

Retro domestic goddesses proved they were last but not least when they crossed the finish line at Hereford’s 5k Race for Life on Sunday.

The ladies at AGA TWYFORD in Leominster dressed as ‘Betty Twyford', the1950s domestic goddess, complete with pinnies and headscarves, were accompanied by two-year-old Alis Barker, who insisted on walking every single step of the way!

The firm’s marketing director, Rose Norman, cookware sales manager, Julie Busek, book keeper, Sue Brown and sales administrators, Jo Jones and Alice’s mum, Jacqui Barker even took along a tray of Betty’s trademark cupcakes and ‘Bertie’ the Twyford’s ‘pet’ dog.

The ‘Twyford Bettys’, who all live in the Herefordshire area joined a sea of more than 2,000 other pink-clad walkers and runners during the event which is one of a series of fundraisers which take place right across the country.

Rose Norman said: “We had an absolutely brilliant day. Little Alis decided that she wanted to walk the whole way so we had to take it steady. We met some wonderful people and the atmosphere was electric.

“When we decided we wanted to raise funds for charity, we were keen to take part in an event that was a challenge and help raise money for a good cause. We all know someone affected by cancer so it is essential to support the charities that work towards helping people beat this disease.”

Race for Life takes place at a number of venues across the

. It is the largest women-only fundraising event in the country. Since 1994, women of all ages and fitness levels have come together during the Race for Life events to walk, jog or run to help beat cancer.

Some of the fundraisers take part in celebration of surviving cancer. Others take part in memory of a loved one or to give hope to a cancer-free future.

Betty’s super rich chocolate beetroot cake

You can convince yourself that this beautiful rich chocolate cake is a little bit healthy – it does contain one of your five a day!

Cooking time one hour, serves six greedy folk

Ingredients

For the cake

100g (3½oz) drinking chocolate

230g (8oz) self-raising flour

200g (7oz) caster sugar

100g (3½oz) dark chocolate (good quality)

125g (4½oz) unsalted butter

250g (9oz) cooked beetroot (not pickled)

3 large eggs beaten

For the cream cheese frosting

250g (9oz) cream cheese

60g (2oz) unsalted butter

200g (7oz) icing sugar

1tsp of vanilla sugar

A dollop of Betty’s blackcurrant jam

Grated dark and white chocolate to decorate

Method

Grease and line a 20cm deep round cake tin

Sift the drinking chocolate with the self raising flour into a mixing bowl and then mix in the sugar.

Melt the chocolate and butter together in a bowl in the simmering oven.

Puree the cooked beetroot in a food processor, then whisk in the beaten eggs.

Add the beetroot and the chocolate mixtures to the dry ingredients and mix together thoroughly.

Pour the mixture into the greased lined cake tin and bake for 60 minutes or until a skewer inserted in the centre comes out clean either in a baking oven or in a cake baker in the roasting oven.

Remove from the oven and leave the cake to stand in the tin for ten minutes before turning out on to a wire rack to cool. Split the cake in half.

To make the filling beat the cream cheese frosting ingredients together until creamy.

Spread the cake with a layer of Betty’s blackcurrant jam and half of the cream cheese frosting.

Use the rest of the frosting for the top of the cake and sprinkle with a mix of white and dark chocolate.

Betty’s Exotic Beetroot Soup

Serves up to six people

Ingredients

1tbsp of oil

1 large onion, finely chopped

500g (1lb) cooked beetroot, peeled and roughly chopped

2 tsp red Thai curry paste

1 (400ml) can of coconut milk

300ml (½pt) chicken or vegetable stock

Juice of ½ a lime

Garnish

2tbsp of coriander

Sliced red chilli

Spring onion tassel

Method

Heat the oil in a large saucepan on the simmering plate. Add the onion and stir on the heat.

Cover and transfer to the simmering oven for about 10 minutes to soften the onion.

Add most of the beetroot to the onions and stir in the Thai paste.

Fry for a few minutes on the boiling plate. Add the coconut milk and stock and season with salt and pepper to taste, bring it to the boil, cover and then transfer it to the simmering oven for about five minutes.

Blend the mixture in a food processor until smooth. Put it back into the pan, add the beetroot and lime juice and adjust seasoning if needed.

Ladle into warm serving dishes and garnish with the coriander, red chilli and spring onion tassel. Enjoy!

It's official! We have a huge abundance of beetroot in the garden. While they are absolutely glorious looking veggies, we are getting a little tired of beetroot salad and borscht.

So I have come up with a couple of more inventive, tasty ways to use up these delicious healthy veg besides trying my hand at 'natural fabric dyeing' using the beetroot skins and a prolonged period of pickling!

It is a real shame that I don't seem to have the same quantity of carrots and peas - I should have never told my children that the carrots were special 'ice creams' growing in the garden!

Staff at AGA Twyford will be inviting their customers to raise their coffee mugs and enjoy a cupcake for a great cause all this week.

AGA Twyford at Leominster Enterprise Park will host a ‘big T-party’ in aid of St Michael’s Hospice every day this week (July 11 – 15) from 10.30am until 2pm.

A selection of simply beautiful cupcakes which have been created from a variety of special cupcake making kits from the firm’s ‘Betty Twyford’ range will be on offer along with a good old fashioned brew.

Cookware sales team member, Jacqui Barker who works for AGA Twyford said: “We wanted to do something special for St Michael’s Hospice and making some delicious cupcakes will hopefully encourage everyone to dig deep and raise as much money as possible for such an essential facility.”

The Big T is a brand new summer fundraising event in Herefordshire and supporters at St Michael’s Hospice in Bartestree near Hereford are keen to get everyone involved.

Ideas include traditional tea party, toga party, G&T party, and a teddy bear's picnic; you can also gather your colleagues for a 'wear your T-shirt to work' day.

Strawberry Jam Recipe

Strawberry Jam on the AGA

This is a lovely jam, and the lemon takes away the extreme sweetness of the jam. Delicious with scones and cream or just a plain old bread and butter and jam delight!

Ingredients

450g (1lb) strawberries from the garden (increase the quantities according to your haul)

450g (1lb) granulated sugar

l lemon

A handful of flaked almonds

Some butter

Method

Place the sugar, strawberries and chopped up lemon in a bowl, and leave overnight to soak.

Pour into a preserving pan and place in the simmering oven to warm up, then dissolve the sugar completely on the simmering plate, move to the boiling plate and bring to a rolling boil, then test for a set after about quarter of an hour. Do the fridge test – put some jam on a saucer, place in the fridge for about 5 minutes, then drag your finger across the jam – if it forms a wrinkled skin, the jam is set.

Add the knob of butter to eliminate the scum and the flaked almonds just for a bit of a change! Transfer the jam to sterilised Kilner jars – it won’t hang around for long!

Blackcurrant Jam on the AGA

If making jam fills you with fear then try this simple recipe of blackcurrant jam – Blackcurrants are a good fruit to work with because they nearly always set!

This recipe makes around 4.5kg (10lb) jam halve the quantities if it is too much for you.

Ingredients
1.8kg (4lb) blackcurrants
1.7 litres (3pt) water
1 lemon
2.7kg (6lb) granulated sugar
small knob butter
Method
Soak the blackcurrants in a sink of cold water. Remove the stalks and put them in a preserving pan with the water.
Bring the blackcurrants and the juice from the lemon to the boil and simmer, uncovered for around three quarters of an hour, until the fruit is soft and water reduced.

Stir and add the sugar. Continue stirring until the sugar has dissolved bringing it to a gentle boil. After it has boiled for around 10 minutes then do a set test. Put a small amount of jam on to a saucer and put it in the fridge for a few minutes. Move the preserving pan from the boiling plate to the simmering plate.
The set test should show a jam-like consistency when you move it with a spoon. If not, return the pan to the heat, re-boil and test again.

Add a knob of butter and stir well.

Cool the jam for 10 minutes and ladle into sterilised jars and let the jam cool before putting on the lids.

RECIPE FOR SPINACH SOUP

Huge armful of spinach from the garden

2 oz butter, melted

2lbs potatoes, peeled and chopped

2 large onions chopped

A clove garlic chopped

Green garden peas/broad beans

Mint from the garden

Chicken or veg stock – about 2 pints seasoning

Use the simmering plate of your AGA, to gently saute the onions and garlic in the butter, add the chopped potato and sweat until softened. Add any green peas or beans from your veg patch, and some mint from the garden.

Add the spinach and sweat down with the rest of the ingredients, and then add your stock and seasoning. bring to boiling on the boiling plate, and then transfer to your simmering oven with a lid on your pan, for about 20minutes.

Remove and place in your blender and zap the mixture for about 30 seconds.

Serve in soup bowls, with swirls of double cream and chopped chives.

Absolutely delicious and healthy too!

Elderflower Cordial on the Aga

Ingredients

30 elderflower heads

1.7litres/3 pints boiling water

900g/2lb caster sugar

50g/2oz citric acid (available from chemists or good health food shops)

2 unwaxed oranges, sliced

3 unwaxed lemons, sliced

Preparation method

Gently rinse over the elderflowers to remove any dirt or little creatures. Using the Aga kettle, boil three pints water and pour over the sugar in a large mixing bowl and leave to cool. Add the citric acid, the orange and lemon slices, and then the flowers. Leave in a cool place for 24 hours, stirring occasionally. Strain through some muslin and transfer to sterilised bottles.

Fabulous Summer Foraging

What a shame that when we are young, we take those long golden summer holidays for granted, especially if, like me, you grew up in the glorious Herefordshire countryside. The days were endless and we spent our time out in the sunshine playing on our bikes and in the fields and streams making dens and dams.

It seems that we were perfectly happy to entertain ourselves but these days, with my domestic goddess hat firmly in situ, it appears that we need to spend more time and money keeping our children busy during the school holidays. And with my two, Teddy and Susan, soon to return home from school for six whole weeks, I started racking my brains for ‘things to do’ to stave off the cry of ‘I’m bored!’

We all know it is far better for children to spend their time outdoors being active rather than in front of a TV or computer screen but there are a whole myriad of modern dangers which leaves us feeling guilty if they are left unsupervised. To be able to get to week two without hearing those dreaded cries would be a major achievement. I think about my childhood some more and realise that I simply can’t turn my children loose for the summer like our parents did. The world is a very different place nowadays.

But I do remember some of my most favourite childhood memories involved my mother and grandmother teaching me about the ancient art of foraging and making a lovely, sweet treat at the end of it. In those days, it was a case of waste not, want not, and people valued any tasty morsels that they could glean from the surrounding countryside. Hot sunny days were enjoyed wandering along the hedgerows collecting wild raspberries and tiny strawberries. Later in the autumn came hazel nuts and blackberries. Wellington boots to protect our knees from stinging nettles and a large stick to beat them down were an essential part of the collecting kit.

One Saturday, as a sort of a dummy run, I tear my two little Twyfords away from their computer games and TV programmes, equip them with the essential kit, basket, scissors, wellies and sun hats and off we go on the hunt for elderflowers and other fare.

Amid cries of, ‘but I wanted to watch…’ and ‘I was just feeding my virtual pet’, we prise the ‘non-virtual’ dog out of his basket and set off. It’s funny because as soon as you start actively looking for free forage, you see that there is plenty of it about and we soon find huge clumps of the delicate tiny flowers.

Instructing the two tiny Twyfords to get snipping with the scissors we start off collecting at a fine rate but interest soon wanes and I know I have lost them when tears and sulky faces start to come forth so we move on to raspberries and wimberries. It really is surprising how much edible produce there is hanging around in the local countryside and it is all delicious and free!

An hour or two later with berry stained faces and fingers we head for home. Although I am sure that Teddy and Susan ate as much as they collected, we still have a good haul of elderflowers, wimberries and raspberries. We have even found a few tiny, deliciously sweet wild strawberries!

Back home, the kitchen was filled with the fabulous perfume of elderflowers and berries. And while the children may have lost interest in the gathering and making process, they certainly enjoyed the summer pudding we had for tea!

And later, the Aga is proving to be the perfect place to boil the children’s t-shirts in a bid to remove the purple stains from their clothes. The purple fingers and cheeks may well be with us for a few more days.

So, I have bottles of elderflower cordial to keep us going throughout the summer holidays and tons of yummy fruit in the freezer which are ideal for sweet puddings, smoothies, lollies and ice cream – perfect ingredients for the school holidays.

Tired out, my two were tucked up in bed by 8pm with full tummies and contented smiles dreaming of their long golden summer holidays to come – what could be better for a domestic goddess?

Well, a lot has been happening to our domestic goddess, a big move from Hereford to Leominster and the creation of a wonderful new showroom. Betty is going to have her own space to show all of the new and original stock. Feeling exhausted yet energised from a huge change. Betty's new textiles are selling like hot cakes, designed around the Aga cooker, in a lovely Farrow & Ball light blue with cream spots and pink or yellow trim and how about the enamel goodies all made specially for Betty

Today I thought - hang it, away away away, and so I did, but only into our local town.
I am drawn to all things vintage and managed to purchase a cushion - old and lovely and orange with beading for only £10, a sort of over patterned jar with lid - very 50's and quite bad taste but I love it, and a wonderfully coloured and patterned stack of velveteen boxes - what for - I don't know, but sometimes you just have to keep the recycling going!

Wet and windy today and I am double coated - cold in my office - oh come on spring, I am waiting for you.

Cupcakes await for me to package them up - I am doing an Easter and a Valentine kit.

Got lots to do - work on the website - need cheering up, come on Betty - hum some songs that won the war....

...and suddenly so much is happening it is hard to keep pace. My lovely designer Tess is delivering my textile samples for photography. They are to be included in my new brochure, along with my new sprays for the kitchen (Marble and Granite and Ceramic Hob cleaner - all in Betty's colourful and spotty labels). The textiles are specifically for the Aga and I am so excited. It seems to have been years in coming to fruition. I guess that is the way of things, so much thoughtful planning and dreaming and then , Wallop, bang, action!

Today I have resolved to move into 2011 with a positive frame of mind, so I may force myself to go to the gym tomorrow...

I am thinking about all of the new and exciting products that Betty Twyford will produce. The textiles are almost ready, and the Valentine Cupcake package is being thought about! A lot of chocolate springs to mind, along with red roses and glittery things (like diamonds..)

Freezing tempatures. Steaming hot food!

The recent cold weather has brought on a cooking frenzy - lots of soups and stews and casseroles on the Aga. Try this soup for a heart-warmer

Lots of chopped vegetables - potato, carrot, swede, squash, peas, onions and garlic
Simmer until tender with some stock and
Then add a good wedge of stilton cheese.
Liquidise to a smooth soup
And eat with croutons!

On a cold, sunny but frosty day, the aroma of mulled wine simmering on the Aga and Bing Crosby singing of his dream for a ‘White Christmas’ greeted the intrepid visitors to Betty’s Christmas gift extravaganza! Our gorgeous cake decorator, Jacqui was kept extremely busy demonstrating how to ice and decorate a Christmas cake and the beautiful Julie was busy helping customers to make the right choice of gift. Of course, Betty’s wonderful colourful and spotty ‘Cupcake Kits’ stole the show. They were disappearing like hot cakes!

Mulled Wine Recipe

Here is the recipe used for the Mulled Wine, which certainly helped the day to go with a swing!

Two bottles of red wine

2 fl oz of Damson Gin (Betty made her Gin 3 years ago – very potent!)

½ Carton Orange Juice

2 large oranges stuck with cloves

2 large lemons stuck with cloves

4 cinnamon sticks

¼ cup Demerara suga

3 or 4 Bay leaves

Stir the sugar into the wine and heat gently (do not boil)

Add the oranges, lemons and spices

Pour in the Damson Gin

Add the Bay leaves

Add the orange juice

Simmer for about 20 minutes and then keep warm on the Aga. Pour into wine glasses and relax!

Lamb Shanks and Anchovies Made on an Aga.

Lamb Shanks are wonderfully tasty and economical to use. The anchovies bring out the ‘meatiness’ of the lamb. This dish provides a complete meal for a family of four people and is warming, filling and special. Made mostly of store cupboard ingredients, it can be left in the simmering oven for most of the day. It could also be served as a dinner party main course, just add a swirl of cream!

INGREDIENTS
2 good sized lamb shanks
1 small tin anchovies (drained of oil and chopped)
1 tablespoon oil
2 medium onions (chopped)
2 large cloves garlic (chopped into slithers)
2 tins plumb tomatoes
1 large tablespoon tomato puree
1 good bulb fennel (chopped)
1 medium orange pepper, chopped
3 medium carrots, peeled and chopped
4 good sized potatoes (chopped into small pieces)
1 tin butter beans
2 dried chillies
2 tsp rosemary
2 tsp cumin seeds
2 tsp sugar
2 low fat vegetable cubes in 3/4 pint of boiling water
Flour for thickening
Splash of red wine

Method
Cut small slits into the lamb shanks and insert the slithers of garlic. Rub with oil and sprinkle over with rosemary. Brown the shanks, being careful not to burn them. Whilst gently stirring, add the cumin seed, fennel, onion, carrots, and pepper. Then add the chopped dried chillies. Sprinkle over about 1 tablespoon of flour, and cook for 1 minute, and start to add the stock. Bring to the boil on the boiling plate; add the chopped anchovies, sugar, tins of tomatoes and the tomato puree to make a thickish sauce. Taste and adjust the seasoning if necessary. (At this point you could pour in a splash of red wine)

Transfer to the simmering oven and cook for 21/2 hours. Remove from the oven and add the butter beans and potatoes. Bring back to the boil and then put back into the simmering oven for a further ¾ - 1 hour. To serve, sprinkle over chopped coriander and ladle into large bowls. The lamb will fall off the bone with good grace and ease!

Hugo and the cake

Our little darling had his birthday on Sunday and couldn’t wait until we decorated his cake (note the bite marks).

Betty quickly cooked another one, decorated it with butter cream and adorned the whole pretty cake with sparklers.

However, Hugo’s tummy was so full – he couldn’t manage to eat it but he certainly managed to lick the butter icing bowl!
